cheesy Italian ravioli

I made this last night..super good

1/2 lb ground beef
1/2 lb bulk italian sausage( i used ground sausage i found in the meat area)
1 container (15oz) marinara sauce( i used a jar of speghetti sauce)
1 cup fresh mushrooms
1 can(14 1/2 oz ) diced tomatos, with italian seasoning( i just used diced tomatos from the can and added some mrs dash herb and garlic seasoning)
1 package(9oz) refrigerated cheese filled ravioli(i used cheeese torillini)
1 cup grated mozza

Heat oven to 375. Cook beef and sausage in skillet over medium heat until brown. Drain
Stir marinara sauce, mushrooms, tomatos into beef mixture. Pour half of sauce mixture into ungreased rectangular baking dish. Arrange ravioli in sauce in dish. Pour remaining sauce over ravioli.. Sprinkle with cheese.
Bake uncovered for 20-25 min or until ravioli is tender and mixture is hot!

Apple Cinnamon Muffins

So last night I made muffins.. I underbaked them a bit but they are so good

Cream together:
2 cups sugar
2 eggs
1 cup oil
1 tablespoon vanilla

Sift:
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon

3 cups diced apples

Add dry ingredients to creamed ingredients. The batter will be VERY thick. Add diced apples

Fill muffin cups to top, sprinkle with brown sugar. Bake at 350f for 20-25 ( i think i did mine for about 22 min and they were underbaked and a bit gooey still but i like them this way!) Makes 18-24 muffins.

My mom and aunt were over this morning and LOVED them.. Very good recipe find!!

Chicken Alfredo Pot Pie

Can you guess where this recipe is from? Hahah

1 can refridgerated soft breadsticks
1 jar(16oz) Alfredo pasta sauce
1/3 cup milk
1 bag(1lb) frozen veggies, thawed and drained (or fresh!)
2 cups cut up cooked chicken
2 tbsp grated parmasan cheese
1 tsp italian seasoning(i used mrs dash herb and garlic seasoning)

Heat oven to 375f. Unroll breadstick dough, seperate to form 12 strips and set aside
Mix pasta sauce, milk, veggies, and chicken in 3 quart saucepan. Heat to boiling, stirring occasionally. Spoon into ungreased 9x13 pan.
Twist each breadstick, arrange crosswise over hot chicken mixture. Sprinkle with cheese and italian seasoning.
bake uncovered for 20-30 minutes or until breadsticks are deep golden brown.

Cheeseburger Pasta Toss

This is also from Betty Crocker's "Easy Family Dinners" Can you tell i like this cookbook? Best birthday present ever!

2 cups uncooked wagon wheel or tricolored rotini pasta
1 lb ground beef
1 large onion chipped
1 jar (8oz) process sharp Cheddar cheese spread
1/2 cup milk
1/2 tsp garlic salt
1 large tomato chopped
1/2 cup shredded cheddar cheese

Cook and drain pasta.
Cook beef and onion over medium heat until browned and cooked, drain.
Reduce heat to medium. Stir in cheese spread, milk and garlic salt. Continue stiring until cheese is melted and mixture is well blended. Stir in pasta and tomato. Sprinkle with cheddar cheese, cover and heat 2 to 3 minutes until cheese is melted.

I think next time i make this i will add more cheese spread to it.. It was cheesy but not cheesy enough for me...

Italian Pancake Dunkers

This is also taken from Betty Crocker's "Easy Family Dinners" cookbook

1 cup pasta or speghetti sauce
2 cups original Bisquick mix or your own homemade pancake batter(omit the milk and eggs from this if you make your own batter)
1 cup milk
2 eggs
1/2 cup grated mozzarella cheese
1/2 cup finely chopped pepperoni
1/4 cup finely chopped green bell pepper
2 teaspoons italian seasoning( i used mrs. dash herb and garlic seasoning)
1 small tomato finally chopped

Heat pizza sauce until warm. Keep warm. Spray griddle or pan with cooking spray. Heat griddle to 375f or pan over medium heat.

Stir bisquick mix, milk and eggs in large bowl until blended. Stir in remaining ingredients. (You can also substitute other ingredients you would have on pizza. I have put in ham and pineapple in mine) Spoon batter by tablespoonful onto griddle.. Spread slightly.

Cook pancakes until dry around edges. Turn. cook other sides until golden. To serve, dunk pancakes into pizza sauce.

Honey Barbecue pork roast

I made this on Sunday in my slowcooker and had rice with it.. It was so good and is what im eating for lunch today!

3lb pork boneless shoulder roast
1 bag (1lb) of baby carrots( i didnt put these in cuz i dont like mushy carrots and figured theyd be very mushy after all day in slowcooker)
1/2 cup bbq sauce
1/4 cup honey
3 tbsp balsamic vinegar
1 tsp seasoned salt
2/3 cup bbq sauce
1/4 cup flour
1 cup frozen corn( i also didnt put this in haha)

Place pork in slowcooker. Arrange carrots on and around pork. Mix 1/2 cup bbq sauce, honey, vinegar and salt in small bowl. pour over pork and carrots.

Cover and cook on low heat setting for 8-10 hours.
Remove pork and carrots from cooker, cut/shred it into littler peices. Mix 2/3 cup bbq sauce and flour, gradually stir into juices in slowcooker. Add corn if you want it now. Put all pork back into slowcooker . cook until corn is cooked..

Or you can just take out the pork and put it on platter and cut it into slices and make sauce to serve over..

Horshradish sauce

So I make a horshradish sauce for fondue for dipping beef in ..Or i have also made if for dipping chicken into.. Its yummy!

1 cup sour cream
3 tablespoon prepared horseradish
2 teaspoons lemon juice
2 scallions, finely chopped
1/4 teaspoon Worcestershire sauce
salt and pepper to taste

Instructions

Mix all ingredients in a small bowl. This sauce is best if prepared at least an hour in advance.

Muffins

These are my 2 favorite muffin recipes

Bran Muffins
1/4 cup shortening
1/2 cup brown sugar
1/4 cup molasses
2 eggs
1 cup milk
1 cup flour
3/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups bran

raisins or craisin about a cup

Mix all ingrdients together and put in muffin cups .. Bake at 400f for 14-15 minutes

Blueberry Muffins

1/4 cup soft butter or margarine
3/4 cup white sugar
1 egg, well beaten
1 1/2 cups flour
1/2 tsp salt
2 tsp baking powder
1/2 cup milk
1 cup blueberries

Cream butter and sugar together. Add egg and mix well..Add sifted dry ingredients alternativly with milk and fold in blueberries. Fill 12 muffin cups 2/3 full. Bake at 375f for 15-20 minutes. The batter is really yummy to eat too :P LOL

Playdough

Ok, so this isnt food, but it is a recipe!

Non Toxic Playdough

1 cup salt
2 cups flour
4 tbsp cream of tartar
2 tbsp oil
2 cups water
food coloring

Put all ingredients in pot on medium heat. Stir constantly until it comes away from edges of pot. Gets very hard to stir and gets kinda dry. Add food coloring and mix well.

Chocolate Chip Cookies

Chocolate chip cookies get their own post!!


2 1/4 cups flour
1tsp baking soda
1 tsp salt
1 cup butter or margarine
3/4 cup white sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
2 cups semi sweet chocolate chips

In small bowl sift together flour, baking soda, and salt.
In mixer combine butter, and sugars until light and fluffy. Add vanilla .. Beat in eggs ONE at a time. Blend in flour mixture. Stir in chocolate chips. Drop by spoonful onto ungreased baking sheet(i always grease mine lol)

Bake 8-10 min at 375f. cool on cookie sheet for a minute.

I added skor bits last time i made these... I think next time i will just buy a couple skor chocolate bars and crush them up a bit. The skor bits you can buy in the chocolate chip area are really tiny and you cant taste them as much in the cookies.

Sweets

These are a couple of my favorite sweets recipes!

Brownies

1/2 cup oil
1 cup brown sugar
2 eggs
1/2 cup flour
1/2 tsp baking powder
1/8 tsp salt
4 tbsp cocoa
1/2 cup walnuts(optional)

Mix all ingredients together and bake at 350f in a greased 9x9 pan for 20 min. Start at 18 minutes so you dont overbake them!

Caramel Popcorn

Bring to a boil:
1 cup brown sugar
1/2 cup margarine
1/4 cup corn syrup
1/2 tsp salt

Add 1/2 tsp baking soda, stir until foamy. Pour over popcorn and mix. Also can add nuts.

Gingersnaps

3/4 cup shortening( i usually use margarine)
1 cup white sugar
1/4 cup molasses
1 egg
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1tsp cinnamon
1/2 tsp cloves
1/4 tsp nutmeg
1 1/2 tsp ginger

Mix all ingredients together. Roll size of walnuts. Roll in sugar. Put 2 inches apart on greased pan. Bake at 350f for 12 min.

Peanut Butter Cookies

1/2 cup shortening or margarine
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Mix well shortening(or margarine) , peanut butter, sugars and eggs. Blend in flour, soda, baking powder and salt. Cover and chill. Shape dough into 1" balls. Dip in sugar. Press down with fork. Bake at 375 f for 9-12 minutes until set, not hard.

Perogy Pizza

One night I decided we were having perogies for supper but didnt wanna do the usual perogies and sour cream so i came up with this.

Perogies
Pizza sauce
Any toppings you would have on pizza
Mozzarella Cheese

Cook perogies. Place them in oven safe pan. Cover with Pizza sauce, toppings and cheese. Cook at 350f until cheese is melted. About 20 min. Can also broil for a few min at the end so cheese gets browned! I always eat this with sour cream as well.

Easy Southwestern Stroganoff

I got this one from Betty Crocker's "Easy Family Dinners" cookbook i have..It has become a favorite meal!

Easy Southwestern Stroganoff

1 pound ground beef
1 cup water
1 jar(16oz) thick and chunky salsa
2 cups uncooked wagon wheel pasta(4oz) or any type of small pasta
1/2 tsp salt
1/2 cup sour cream

Cook beef in pan over medium heat until browned. Drain
Stir water, salsa, pasta and salt into beef. Heat to boiling, reduce heat and simmer about 15 minutes, stirring occasionally until pasta is tender.
Stir in sour cream. Cook until just hot.

Sometimes i add corn to this as well and you could add other veggies. Would probably just have to add a bit more water.

Late night idea.

So last night as I was laying in bed i had the thought to start up a blog with recipes I like seeing as I have friends that always ask me for recipes..So here it is!! I will get a bunch up soon!!
